2015 started with big agendas like every year starts for me!

One of the things on the list was to post more on this Blog, which clearly is not happening, so I decided to post at least once in a month. Just to keep a track of the new things I have been trying in the kitchen ! 🙂

I have just recently developed a taste for mushrooms, so I decided to cook this easy starter one day. The result was quite decent, a must try dish at home, especially for the ones who like the smokey-barbeque flavour.

Ingredients:

  • Mushrooms – 200 gms
  • Corn – 1 cup
  • Onion – 1
  • Capsicum – 1
  • Jack Daniel’s® Hickory Brown Sugar Sauce – 2 tbsps
  • Salt – to taste
  • Pepper – 1 tsp
  • Chilli Powder – ½ tsp
  • Butter – 2 tbsps

Method:

  • Heat the butter in a pan
  • Chop the onion in 4 halves and sauté in the pan
  • Chop the capsicums in chunky pieces and add to the pan
  • Once the onion looses its colour, add the chopped mushrooms to it
  • Add all the seasoning and the sauce to it, and let it cook on high flame for about 5 minutes
  • Once the mushroom look smaller, reduce the heat and cover with a lid and cook for another 5 -10 minutes.

Chocochip Ice Cream in a Bun

Well this is not a recipe but its something that one must try, to understand what a sweet burger is all about, and how you would love to dig into one any chance you get but of course forgetting the calories that come in this package deal !!

Just slit the bun from the centre add a scoop full of chocochip ice cream or any other ice-cream that you love; and bite into it.

Sautéed Vegetables

Ingredients:

 

  • Carrots – 2 pc
  • Zucchini – 1 pc
  • French Beans – 100 gms
  • Broccoli – 100 gms
  • Red Bell Pepper – 1 pc
  • Yellow Bell Pepper – 1 pc
  • Baby Corn – 50 gms
  • Olive Oil – 2 tbsp
  • Garlic – 5 cloves
  • Mixed Herbs – 1 tsp
  • Parsely – to garnish
  • Salt – to taste
  • Oregano – ½ tsp
  • Pepper – ½ tsp

 

Method:

 

  • Cut the carrots, french beans, peppers, baby corn lengthwise, chop the florets of broccoli and slice and chunk zucchini.
  • Blanch all vegetables in hot water for 10 minutes
  • Heat the oil in a pan, chop the garlic finely and add to the hot oil
  • Sauté for a minute, add in all the vegetables
  • Toss them till nicely coated with the oil
  • Sprinkle the herbs, oregano salt and pepper

 

Serve it hot with garlic toast.

Devilled Eggs

I don’t eat eggs at all !! Actually I eat eggs in cakes, cookies, brownies, puddings and  all 🙂 But tell me to eat a plain boiled egg and you will see a not-soo-happy-face.  I have prepared this recipe myself, but did not try the final outcome, and I am only sharing it because people around me looked really happy !

Ingredients:

  • Eggs – 12
  • Mustard Sauce/Powder – 1 1/2 tablespoon
  • Mayonnaise – 1/3 cup
  • Tabasco – 1/4 teaspoon
  • Salt and pepper
  • Paprika

Method:

  • Hard boil the eggs; Fill a saucepan halfway with water and gently add the eggs to it. Add one teaspoon salt and vinegar to it. And let it boil for about 15 minutes.
  • Peel the eggs. Using a sharp knife, slice each egg in half, lengthwise. Gently remove the yolk halves and place in a small mixing bowl. Arrange the egg white halves on a serving platter.
  • Using a fork, mash up the yolks and add mustard, mayonnaise, tabasco, salt and pepper. Spoon egg yolk mixture into the egg white halves.
  • Sprinkle with paprika or garnish with parsley and a drop of ketchup

Ricotta Cheese and Spinach Tart

You might be looking at the picture and wondering why pink? No I have not used food colouring! All I did for this was add a teaspoon of beetroot juice, to give it that colour, simply for fun! If pink is not your colour then you can avoid that step !

Ingredients:

For Crust:

  • Bread slices – 6
  • Melted butter – 2 tbsp

For Filling:

  • Ricotta cheese – 1 cup
  • Beetroot juice – 1 tsp
  • Spinach – 1/2 cup
  • Salt – to taste
  • Pepper – to taste
  • Mixed herbs – 1 tsp

Method:

For Crust:

  • Use a rolling pin to flatten the bread completely
  • With a brush spread the melted butter on both sides
  • Cut the sides with a pizza cutter
  • Now just slightly press each of them in a muffin tray to form tart.
  • Bake for 10 minutes at 180C it till edges golden brown

For Filling:

  • Chop the spinach finely and boil for about 5 minutes
  • Add it to the ricotta cheese
  • Add all the seasoning to the bowl and mix well

Just before you want to serve it, put a spoonful of the mixture in the tart and garnish with parsley

Thai Golas

Ingredients:
  • Gol-gappas – 18 pc
  • Green Curry Paste – 1 packet
  • Coconut Milk – 200 ml
  • Potatoes – 4 no
  • Carrots – 2 no
  • Beans – 1 cup
  • Salt – to taste
  • Olive oil – 1 tbsp
Method:
  • Boil the potatoes, carrots and beans in separate pans and mash them together
  • In another pan, heat the olive oil, then add the green curry paste to it, stir it well so that the oil and paste have mixed well
  • Add the coconut milk to it and bring to boil
  • Now pour this curry in the mashed vegetables bowl
  • Mix it well and check the seasoning
  • Make holes on one side of the gol-gappas and put this mixture in it
  • Garnish it with parsley or just sprinkle chilli powder on it
  • Serve it warm

You can always change the filling to your liking. Next time i am going to try some thai basil chicken in the gol-gappas

Hot Potato Rosemary

Ingredients:

  • Baby potatoes – 1 kg
  • Rosemary – 4 sprigs
  • Garlic – 6 cloves
  • Olive oil – 2 tbsp
  • Butter – 1 tbsp
  • Salt – to taste
  • Pepper – to taste

Method:

  • Boil the potatoes until almost done
  • Clean out the skin of the potatoes and keep aside
  • Now in a stone grinder, put one tablespoon of olive oil, leaves of the rosemary and garlic cloves; grind to form a paste
  • Heat the remaining olive oil in a pan, once the oil is hot add the rosemary paste and after a minute add the potatoes and season it with salt and pepper
  • Add butter to it
  • You can also add the dry mixed herbs at this point if you want (optional)
  • Let it cook for about 5 minutes

You can serve this dish as it is, or in a platter with other sautéed vegetables or even chicken.

Chocolate Pizza

I like this invention! For this recipe I used a pizza base bought from the market, but I have also made thin crust pizza base at home. That is crispier and healthier.

Ingredients:

  • Pizza base – 2 no
  • Chocolate chunks – 100 gm
  • Cream – 1/2 cup
  • Assorted Fruit – 1/2 cup
  • Assorted Nuts – 1/2 cup
  • Maply Syrup – 1 tsp
  • Vanilla essence – 1 tsp

Method:

  • Preheat the oven at 150C
  • Grill the pizza base for 5 minutes, and take it out
  • For the chocolate sauce, heat the cream till boiling then add chocolate chunks, vanilla essence and maple syrup to it
  • Put a spoonful of the chocolate sauce on the pizza base, top it up with the fruit and nut. I used kiwis, grapes and cashews!
  • Grill it for another 5 minutes and take it out from the oven
  • Using a pizza cutter, slice the chocolate pizza and serve warm

Grilled Choco Jam Peanut Butter Toast

When your bored and have nothing I do. That’s what you should eat and make yourself happy :).

Ingredients:
• Bread Slices – 4
• Chocolate spread
• Jam
• Peanut butter
• Cinnamon

Method:

• Choose the spreads you would like to combine together and put them generously on your brown bread
• Grill them in the oven for 8 minutes with a little butter on the outer sides
• Sprinkle with cinnamon

Ready to eat.

Apple Nachos

Ingredients:

  • Apples – 4 no
  • Muesli – 3 tbsp
  • Chocolate Sauce
  • Maple Syrup
  • Peanut Butter

Method:

  • Core the apples and slice them. Use a slicer to get the best results
  • Place one layer of apples and half of the muesli and the place the other layer and rest of the muesli on top
  • Just top it up with our favorite syrups and sauces

Serve chilled.
