Homemade Herbed Cream Cheese

This is a low fat recipe for the health conscious people, who are always on a look out for the yummiest things with the least amount of calories !! Yes, this is the recipe you all have been waiting for, trust me !

A cream cheese sandwich is a classic summer breakfast for the hot and humid Delhi mornings, the base of this cheese is yogurt which  gives a cool and refreshing feel and instant happiness cause you have consumed something yummy with almost no calories at all 🙂 And once you read on you will realise there is hardly anything you need to do with this recipe and a dozen variations can be done to suit your liking.

Ingredients:

  • Yogurt – 500 gms
  • Mixed Herbs – 1 tsp
  • Chilly Flakes – 1/2 tsp
  • Fresh Parsley – a bunch

Method:

  • You need a bowl, a strainer, muslin cloth and yogurt
  • Pour the yogurt on the muslin cloth, add chopped fresh parsley, and the herbs and chilly flakes to it and tightly twist it around, put it in the strainer and place it in the bowl
  • Now just refrigerate it and forget about it for 24 hours.

Just use it as a spread for breads, bagels, buns or even a hot dog !!  I eat mine with some lettuce leaves and salami 🙂

Pita Pockets

An innovative way to use the pizza base and make pita pockets at home.

Ingredients:
• Pizza Base – 2 no
• Lettuce – 1 bunch
• Cucumber – 1 pc
• Tomato – 1 pc
• Onion – 1 pc
• Black Olives – 1 cup
• Mustard Sauce
• Tomato Sauce
• Mayonnaise
• Salt – to taste
• Paprika – ½ tsp
• Pepper – ½ tsp

Method:
• Heat a pan without oil and place the pizza base on it, sprinkle a few drops of water to it, and cover with a lid for one minute
• Do the same on the other side
• Now cut the base in half and slice from the centre, making sure your not touching the end of the base
• Once you have made the opening for the filling, cut into half again
• Slice cucumber, onion, tomato, olives and season it well with salt, paprika and pepper
• Now fill the opening with the lettuce and add the seasoned veggies to it
• Top it up with sauces that you enjoy. I used tomato, mustard and mayonnaise

Buttermilk Scones

Ingredients:

  • Flour – 500 grams
  • Baking soda – 2 tsp
  • Cream of tartar – 2 tsp
  • Butter – 75 grams
  • Caster sugar – 2 tsp
  • Buttermilk – 300 ml
  • Egg – 1 (beaten)

Method

  • In a big bowl add flour, baking soda, cream of tartar, butter along with caster sugar and mix
  • While mixing keep adding some buttermilk, bring it all together, forming dough and take it out on a board
  • Sprinkle some flour on the board and pat the dough to the thickness of your choice
  • Cut small pieces of the dough with the cookie cutter and place them on a baking tray
  • With the help of a brush touch up the pieces with the beaten egg
  • Bake in a preheated oven set at 200C for about 10-12 minutes

Serve the scones with strawberry jam or chocolate spread.

Apple Nachos

Ingredients:

  • Apples – 4 no
  • Muesli – 3 tbsp
  • Chocolate Sauce
  • Maple Syrup
  • Peanut Butter

Method:

  • Core the apples and slice them. Use a slicer to get the best results
  • Place one layer of apples and half of the muesli and the place the other layer and rest of the muesli on top
  • Just top it up with our favorite syrups and sauces

Serve chilled.

 

 

Chocolate Mug Cake

Preparation time: 8 Minutes

Baking Time: 1 1/2 minutes (In Microwave)

Ingredients:

  • All Purpose Flour – 3 tablespoons
  • Powdered Sugar – 3 tablespoons
  • Cocoa Powder – 2 tablespoons
  • Salt – a pinch
  • Baking Powder – 1/4 teaspoon
  • Milk – 3 tablespoons
  • Olive oil – 3 tablespoons
  • Egg – 1
  • Vanilla essence – 1 teaspoon

Method:

  • In a bowl sieve all the dry mixture, the add the egg and oil and milk and the vanilla essence
  • Whisk with spatula well
  • Grease a microwave mug with oil, and add the batter to it.
  • Now bake it in the microwave for one and a half minutes. Make sure you do not keep it for longer as this will make the cake hard.

Ready to eat. Serve with ice cream or custard.

Note: This is a microwave cake, if kept for long after being prepared the cake will become hard. It should be consumed immediately.

 

Egg Muffin

Makes 6 muffins

Preparation time – 5 minutes

Baking time – 20 minutes

Baking temperature – 150 Degree Celsius

Ingredients:

  • Chopped Onion  – 1
  • Chopped Tomato – 1
  • Chopped Capsicum – 1/2
  • American Corn – 2 tablespoon
  • Eggs – 4
  • Grated Cheese – 2 tablespoons
  • Salt – to taste
  • Pepper – to taste
  • Oregano – 1/2 teaspoon

Method: 

  • Mix the onions, tomatoes, capsicum, corn, cheese and salt, pepper oregano in a bowl.
  • Whisk the eggs in another bowl
  • In a muffin tray, lay muffin cups and grease them with oil
  • Put one tablespoon mixture in the cups, and then fill them with the egg. the muffin cups should be half full.
  • Bake them for 20 minutes and serve hot.

Ready to eat.
