I came across a very interesting cupcake recipe, with potatoes and rosemary; sounds strange nah! I had to try this and I must say the results were pretty yum!
Ingredients:
• Flour – 1 1/2 cups
• Dried rosemary powder -2 tsps
• Baking soda -1 tsp
• Sugar – 1 cup
• Mashed potatoes – 1/2 cup
• Eggs – 2
• Vegetable oil – 1/2 cup
• Apple juice – 1/2 cup
Method:
• Preheat oven at 180C
• Sieve together flour, rosemary, and baking soda.
• Beat together sugar, mashed potatoes, and eggs till smooth.
• Mix the oil and apple juice into the potato mixture.
• Slowly add the flour mixture and mix until fully incorporated.
• Fill cupcake liners and bake for 15 minutes.
You can add some buttercream frosting or just have it the way it is 🙂
