Spiced Carrot Cake







• Flour – 2 cups
• Baking soda – 2 tsp
• Salt – 1/4 tsp
• Cinnamon – 2 tsp
• Nutmeg – 1/2 tsp
• Ginger powder – 1 tsp
• Brown sugar – 2 cups
• Oil – 1 1/4 cups
• Eggs – 4
• Carrots – 3 cups
• Vanilla essence – 1 tsp


• Preheat the oven at 200C
• Sieve flour, baking soda, salt, cinnamon, nutmeg and ginger powder
• In another bowl beat sugar and oil together
• Add the eggs one by one to the sugar and oil mixture
• Add vanilla essence and beat again till well mixed
• Fold in the grated carrots
• Bake for 20 mins or till knife comes out clean from the cake

The best way to have this cake is with sugar icing on top.


• Icing sugar – 2 cups
• Milk – 2 tbsp


• Mix the icing sugar and milk together and pour on cake once the cake is cool
• Let it sit for about 30 minutes

The carrots you see on top of the cake are moulded from white chocolate. That was a hit and trial method which worked for this cake. You can also decorate with sprinkling sugar of carrots colours.
